Cashew Chutney Recipe

Cashew Season is in full swing, so it’s a good time to experiment with Cashew recipes. We recently had some friends over, so I used them as guinea pigs (!). The coconut chutney with a distinctly different twist (the fruity note of cashew, rather than the usual dominant garlic/ginger notes) was used as a pre lunch dip with hot pao (goan bread) and some drinks (Jungle Juice, of course – recipe will follow). What to say, it’s been approved by dad and our food connoisseur friends…
